good fish pickling recipe

been pickling fish with this recipe  - tastes great 

 

Wine pickled fish

 

Bone and skin fish

Cut in bite size pieces 

Soak in brine salt water   ½ cup of salt per quart of water       24 hours 

Soak in white vinegar mix   2/3 cup of white vinegar to 1/3 cup of water   - 24 hours

 Make final brine 

 

2 cups of white vinegar

3 cups of white wine 

1 ¼ cup of sugar 

2 tablespoons of pickling spice

Bring to a boil  then let cool 

 

Slice up some onions and mix with fish and cover with the final brine for 7 days  - put in jars and keep cooled  - keeps for months
