Cod with Cheese and Mustard Sauce

A dish I invented last night and which was well received feeds 4-6


1 pack (about a kilo) of white fish ...I bought a kilo of frozen "cod" at macro for 129p a kl


2 onion cubed


4 garlic cloves chopped or to your taste


1 20ml pack uht cream


1 heaped tbls corn starch


1 tbls (depending how strong)Ground mustard powder


150 grams grated mature cheddar


salt and pepper


Defrost the fish and season with a little salt each side cover with water in a large pan and simmer for 8 mins or until just cooked set aside the remaining stock


gently fry the onion and garlic in a little oil in a large non stick pan until its soft don't caramelized add the cream, fish stock,mustard bring to a gentle simmer for 3 mins or so


make a mix of the corn starch in a small bowl with enough just enough water to blend into a runny mix (not to critical) stir in to the sauce it should thicken quickly (if not make a small amount more) add the cheese and when its incorporated salt and pepper to taste add water or milk to adjust consistency keep on very low heat and add the cooked fish spooning the sauce to cover it all for a few minutes serve with rice await compliments
