Where do you get your sausage fix?

The casings choriso is made with are not as tough or thick as the English banger casing and is edible, as they are real, not synthetic.

 

Urologist, GRO, what's the difference?

Never had a tough british banger casing but have had casings here so tough the sausage squirts out as a chainsaw could not cut through the casings.

 

 

Perhaps our resident British Sausage specialist needs to chime in here

although I am a Brit I tend to go all German and Swiss when it comes to sausages here. They seem to have got it together much better.

    I make my own.   The head butcher at Rustans, Ayala makes my ground pork/fat ratio that I ask him for.   All spices I need are readily available in Cebu.   I do not stuff casing as I prefer patties anyway.   Been doing this for years.   I also have them custom cut pork belly and I make my own bacon, curing it and smoking it.    Beets store bought honey/toms of sugar bacon you buy here.   Aso make my own hams.

Just checking...are you saying you get hams at Rustans Ayala?  I keep looking for good ham here, but all the supermarkets

seem to have is the 'pear' hams which contain all sorts of starch and other crap.  I just want a real bone in or deboned ham...would

even settle for a canned ham provided it was ham meat.

After importing a batch from UK, another supplier with distribution in Malaysia, then said they would relent on minimum order quantity, and let me order as little as I wanted, sent via Air Freight.

 

The costs might be higher but couple of advantages, compared to Sea-Freight.

 

1.     Loss by damage

(3 sacks had to be written off due to fork lift having pierced ‘paper’ sacks – should have been plastic, like sacks of rice, so less problems from humidity)

 

2.     Difficult to keep fresh, as needs to be stored in cool, dry environment, for long shelf life.

So best only order what can be used in 3 months max

 

The extra cost of Air Freight is offset by not having loss due to sack damage and loss due to the rusk not keeping fresh past 6 months plus (if not able to keep cool, and dry).

The other item difficult to find in good quality is the Hog Casings (experimented with ‘collegen’casings, but they come ‘undone’ when cooking it seemed?).

You also need ‘Seasoning’ that includes some preservatives, to give longer (1 week) shelf life (fridge).

 

You can buy Seasoning without additives, but needs to be consumed within 2-3 days in the fridge.

 

I bought seasonings off the company who supplied the Rusk.

The seasoning you buy depends on the type of Sausage you are trying to reproduce?

 

I was making sausages to my Dad’s Recipe that got him to the Finals of UK Meat Traders Federation National Sausage Competition, in 1973, 1974 and 1976.

 

His sausage was tasty but somewhat ‘mild’.  

He figured one could add pepper and spices to suit your taste when you are eating it, 

but you can’t take it out if added in to the sausage mix, for those who don’t like it too ‘peppery’ or spicy.

 

You also need a Sausage Stuffer.

it seems s&r is the place to go from reeding this thred. can i buy everything i get from normal supamarket as well as all the imported stuff? r ther jeeps ther from sm or do i need taxi?

There are some normal supermarket stuff in there but it's not your main-stop supermarket.  S&R is more like a big duty-free store.  If you miss the food back home then that's the place to go.  Expect to pay twice the price for them though.  The few normal local brand supermarket stuff in there are priced competitively compared to SM supermarket.

 

You have to be a member to buy there.  Membership for one year cost P700.  I'm not sure they'll allow you to look around inside without being a member.

At SM, they have a restaurant called Big City up near the bowling alley. Claim to have authentic Nathan's and Johnsonville sausages ready to eat. I've never eaten there..
