Local beans and burritos

Over the years, many have asked how to cook the local beans quickly and easily. Tonight I made bean burritos, start time 5:45, I was eating by 7:15, no presoaking, no pressure cooker. We developed this recipe ourselves. Delicious!

 

 

 

Bean burritos



Prep time 11/5 hours  (no soaking of beans) Yield
10-12 medium size burritos



Ingredients;


1/2 KG dry pinto beans (other dried beans can be used, the local red beans work fine)


¼ kg ground pork (bacon can be substituted for additional flavor)

½ cup salsa

1 large onion (chopped)
 

¼ cup chopped cilantro (Wansoy leaves)


1 Tblspn chili powder


2 Tblspn salt


2 Tblspn course ground black pepper

3 Tblspn baking soda

3 Tblspn vegetable oil
 

3 tblspns butter


10 flour or corn tortillas


Cheese as desired



 



                                                Beans;



Wash beans, put in large pot (with lid) and about 8-10 cups water, 2 tblspns oil, and 2
tblspns baking soda. Cover and bring to rapid boil. Stir and reduce heat as needed
to keep from foaming excessively, keep covered. Cook 30 minutes or until skins
peal easily off beans. Drain beans and wash thoroughly, running through fingers
to break skins free. Put back in pot and overfill with water, floating
excessive skins out of the beans, continue overfilling and running through
fingers until most of skins are gone. Beans should be mostly white (skinless). Put
beans back in pot with 8-10 cups water, 1 tblspn oil, and 1 tblspn baking soda,
and bring back to rapid boil. Reduce heat to soft boil and cook until beans are
soft, about 20-30 minutes.  Drain beans,
add butter and stir into hot beans. Let set 5 minutes.



In skillet,
saute ground pork and onion with salt, pepper, and chili powder. Do not drain
fat. When nearly done add salsa and stir. When salsa is well mixed and blended,
add beans to pork mixture. Add cilantro, and mix, reducing heat.



Ladle into warm tortillas, add cheese as desired. Enjoy. Makes 10-12 medium size burritos.



Note; The baking soda will not only cook completely dried beans in just over 1 hour

without soaking or pressure cooking, they will make the beans flatulence free,
or close to it!   Enjoy.

We by them in Dumaguete at Hypermart, P78 for 400 grams. We have also bought them at Ayala supermarket, at one time we bought a 5 pound bag of them for about P500? When we had the resto there was seldom pintos available, the recipe and method was actually developed using the local red beans.

 

Please note the change in the recipe, it was not 1 KG of beans, it was one 400 g package.

Please note the correction in the recipe to 1/2 KG of beans, not 1 KG.

I like my bean skins and flatulence... If you squeeze it just right you can hit a solid F-sharp...  :biggrin_01:

 

NOTE: It is best to practice you pitch in overly crowded elevators and busy grocery isles... then after each attempt simply turn to the person closest to you and loudly say,"Well At Least You Could Say EXCUSE ME!"; then angerly walk away leaving this poor victim to face the leering stares and sour faces of the others...
