Southern style Sausage patty

Greetings!

Here is my modified recipe for local ingredients. it is spicy!

You can adjust it up or down to fit your taste as I did, it really

hit the spot after all the sweet local stuff which I also love

(just not every time) and with no sugar, much easier to clean the pan!

 

 

Breakfast Patty Sausage

 

1 kilo ground pork

1.25 tablespoons kosher salt

2.5 teaspoons ground white pepper

1.5 tablespoons of rubbed sage

3/4 teaspoons ginger

2.5 teaspoons nutmeg

2.5 teaspoons thyme

4 teaspoons cayenne pepper

1 table spoon crushed red pepper

1 cup ice water

 

 

Mix spices with cold water. (warm or hot prematurely activates the flavor

from the spices)

Mix meat with potato masher/hand to combine spices evenly.

Form into balls by hand. Flat by spatula in oil in pan when cooking.

Freeze what you are not going to use in next two days.

I use wax paper to separate balls in disposable freezer ware.

 

I get 15 to 18 patties from a kilo of meat.

My goodness Roger, you lost me at the salt.

 

Is that right?

Four tablespoons?

That's about 4 x 30 grams = 120 grams to 1000 grams of pork.

Makes those meatballs around 12% salt???????

It should be 1.25 tablespoon fulls.

I caught that too. But I was prepped by the preceding line:

:unsure:What so you do with that cup of water do you mix it in with the Ground Pork or strain out the spices and throw the excess water away?? Or is it thick enough just to dump it all into the meat??

It has more entertainment value as is, but I guess it is not proper so yes Brother broden, could you please change my panties to patties please?

 

You put the ice water in the mixing bowel first because you don't want to mix all that pepper dry, it becomes air born very easy.

 

The size of the ball is what pleases you, but mine are large egg or about 2 oz size.
