The easiest soup ever is Miso soup. It's high in protein and low in fat. It can also be made vegan if you're into that by substituting mushroom broth in place of the water and hon dashi. It's a great accompaniment to plain white rice.

 

3 cups of water [水]

1 tbs hon dashi powder (powdered fish stock) [ほんだし]

2 tbs miso paste (soybeans fermented with Koji) [みそ]

green onions and diced silken tofu [ねぎ・どふ]

wakame or hijiki seaweed to taste (optional) [わかめ・ひじき]

 

Boil the water, add the hon dashi and miso paste stirring to homogenize and then add the other ingredients and serve in small bowls. Makes 3 servings.

You say Miso Soup can also be made vegan.I have not known of anyone using any meat of any kind in Miso Soup in all my years and countries of using Miso.

Dashi is fish stock. Fish being animals and thus, meat. It's made out of smoked Bonito fish (a relative of the Tuna) and Konbu kelp.

We use bonito flakes many ways but never knew anyone to use it in Miso soup.Also wakame is the best seaweed for miso soup.

Now to me that sounds silly. You could extrapolate your statement to say that since water once soaked into the ground and washed over earthworms it would be considered a source of meat.

@RogerDuMond: To a vegan or vegetarian, meat broth is treated the same as meat. It may not be a chunk of flesh, but it was made from it.

Calderetta

 

2-3 lbs Beef stew meat

1/4 cup cane vinegar

1/4 cup Soy sauce

2-3 tablespoons olive oil

1 large yellow Onion, chopped

1 Bell pepper, sliced

1/4 cup Garlic, minced

2 small cans Tomato sauce

2 cups beef or chicken broth

2 big Potatoes, cubed

1 can Peas

Salt and pepper to taste

(I sometimes add carrots or cabbage)

 

 

Mix the beef, vinegar, soy sauce and garlic together in a large bowl. Marinate, refrigerated, for anywhere from 1-8 hours. Remove the meat from the marinade and pat dry, reserving the marinade. Heat the oil over medium-high flame in a large pot. Brown the beef in batches, removing it to a plate or bowl. When the beef is all browned, add more oil to the pot if needed and saut
