We cook a whole goat, but we do it lechon style on a spit, just like you would do with a pig.

Best tip for cooking goat in d'Phils was one I got from Doreen Fernandez. She was the doyenne of all things culinary in this country.

Tip: Use lots more garlic than you think you need and marinate the meat in cherry brandy, bay leaves , and cracked black pepper. Hard to go wrong with that set-up.

Oddly, the best place I found to buy cherry brandy is at Mercury Drug. Go figure.

If you buy goat from the market, you have to mask the taste as it has a very strong flavor. Because of the way our cross breed goats are raised, you would have a hard time telling the taste from beef.
