First time I ever made potato salad last weekend for the company picnic. I blended a Japanese receipe with my sister's recipe. 8 or 9 medium sized potatoes (cooked with skins on, then peeled and cubed into ½” squares 6 or 7 small sized dill pickles (diced) 15 green olives (with or without pimentos) – diced Mayonnaise (I use Japanese Kewpie) Stone ground mustard (2 tablespoons) 1 medium sized onion (minced) 8 mini-cucumbers sliced thinly Sweet peas (12 ounce can) 8 boiled eggs (diced) Garlic (1 tablespoon minced) Salt (1 teaspoon) Pepper (1 teaspoon) Shrimp (optional) dozen cut up into small chunks Before dicing the eggs, remove the yolks. Blend the yolks with the mayo, mustard, garlic, salt, pepper. Fold in the onions, olives, pickles, cucumbers, peas and shrimp Toss in the potatoes, but be careful not to over stir.
